The founders and current owners are brothers whose parents purchased and ran Dornoch Castle as a whisky hotel.
The began by bottling whisky under their own label and in 2015 gained permission to convert an old fire station on the castle grounds into a distillery.
Fermentation times are up to 216 hours - probably the longest in Scotland...
